A light and small GOU Santoku knife . The GOU 101-layer knife is a stunningly sharp high quality knife. Overall length: 24 cm, blade: 12,5 cm, blade width: 3,7 cm, blade thickness: 1,4 mm, weight: 114 g. The core of the blade is made of Japanese SG2 Micro Carbide powder stainless steel and it is enveloped by 50 layers of hard stainless steel on each side. The sharpness is stunning and sustainability of sharpness is excellent.
The powdered steel contains a lot of carbon and the hardness is 63 Rockwell.
